Texas Caviar
A few years ago my SIL Sarah introduced me to this great "dip" called Texas Caviar- it is like a Pimped out Black Bean Salsa. When I decided to make it I got her recipe and then combined it with another one from a blog I saw, and well it's the Bomb Diggity!
Every time I bring it somewhere I have at least 2 people tell me it is the best thing EVER, and that they want the recipe.
It also has Many uses.
The first one obviously being a "chip dip"
I have put it in tacos and even made some Killer Enchiladas with the leftovers.
To sum it up this dish ROCKS!!!!!!!
Sorry about the pic, I forgot to take one before it got gobbled up so this is the scrapings of the bowl!
1 can black beans ( rinsed and drained)
1 can white corn (drained)
1 can black eyed peas ( drained)
6- 8 roma tomatoes chopped small
6 avocados dices
chopped cilantro
finely chopped green onions
1 small can of green chilies
Put it all together ( add the avocados right before you are ready to take it) and pour on some Italian dressing to your liking . For me less is more. I also use Good Seasons Italian packets and make my own and then pour most of it in. Then refrigerate.
So next time you are asked to bring something to the Partay- I would bring this and you will be a Hit!

Show Stopping Hot Spinach and Artichoke Dip
When I got married my mom handed down many recipes to me. She was an amazing cook and I was determined to be one too! Among the recipes was this amazing hot dip. I have yet to ever get any negative feedback only people begging for the recipe. Plus the kids go ga-ga for it as well.
This makes a great appetizer to bring anywhere, and trust me people will Literally be eating the bowl wishing for more.
Hot Spinach and Artichoke Dip:
Ingredients
1-14oz can of artichokes chopped and drained
2 cups mayo
1 cup shredded parmesan cheese ( I buy the kraft brand)
1 can diced green chilis
2 dashes of garlic powder
1/2 pkg chopped spinach drained
Directions
Mix & Bake at 325 degrees for 30 min. and serve warm with crakers/chips/carrots
or
Mix and microwave on high for 3-5 min in covered dish until bubbly. Transfer to round gutted bread bowl then pop it and the chunked bread pieces to the oven, until the bread is warm and slightly crispy about 350 for 5-10 min.

Homemade Butterfingers
I have always loved Butterfingers, but lets face it there are a couple of problems with them. First they get stuck in your teeth and never come out and Second they make a huge mess! Well what if I told you I could solve those problems and still give you the flavor you love. Interested?? If you aren't than you are not a Butterfinger fan and therefore do not need to read the rest of this post.
I found this gem on Pinterest (where else!) and knew it would be perfect for the "Pinterest" party my SIL was having, where we were all supposed to bring our favorite Holiday treat that we saw on Pinterest. Fabulous Idea right?! I saw these 3 ingredient Butterfingers and knew that they were going to be a crowd pleaser. Was I right, um Heck Yeah I was!!! I think every single person asked how to make them.
So here it is
1 lb. of Candy Corn ( yeah crazy huh)
1 16 oz jar of creamy peanut butter
1 package Chocolate Almond Bark
Melt the candy corn in a microwave bowl stirring at 30 second intervals. You could also use a double boiler. Once melted add the peanut butter. The candy corn will most likely seize up so you will probably need to microwave for another minute. Stir it together and once it incorporates place it into a 8x8 dish lined with tin foil ( you could also us a 9x13 if you want your bars thinner.) let them chill in fridge till set and cold. Then cut them and dip in melted chocolate. It's messy and hard to get pretty but it don't matter!
